Potassium Sorbate

What is potassium sorbate?

Potassium sorbate is the potassium salt of sorbic acid. Sorbic acid was first isolated in the 19th century from the berries of the rowan tree (mountain ash), and also occurs naturally in some other fruits. The potassium sorbate used in food and cosmetics is generally made in the lab, identical to that natural molecule. It has long been used to keep foods fresh, and it does the same job in skincare: it helps prevent moulds and yeasts from growing in formulas that contain water.
